We visit Thailand atleast once a year. In Phuket there are ATM's not sure about Phi Phi Island. but i am sure tour companies should be able to tell you when you get to Patong Beach.
Before you leave Australia exchange some AUD for Thai Baht at the airport, that way you have some THAI baht when you arrive, as you will need money for taxi/bus to get from the airport to Patong Beach.
the hotel have tour desks for different tours from Patong, otherwise there is heaps and heaps of shopping, relaxing on the beach or around the pool and at night different restuarants and bars to eat and drink at.
bring cash it's better
You will be able to withdraw cash from ATMs in Phuket easily. However at Phi Phi, it is an island resort, you may not have an ATM, so better to have some cash on you when you go there.
In Phi Phi, you can do water activities. You can go island hopping to look at other interesting sights around. Mostly water related. You can even stay over in some of the island too, if the weather is right.
Phuket has a number of theme parks for tourist to visit. So besides the beach and water activities, of which there are more varieties, you can go snorkelling and diving too.
